“Maryland Crab Soup” for Sarah Caldwell…

Bring Liquid stock up from scratch…
Simmer @ less than 160o…not to Boil…
Asemble Dry Ingredients and add to stock….
Add essence or flavor from cooked # 3 crab Legs…
Leave meat in Legs for flavor and seasoning…
Add additional house Ingredients…I.E….
1/4 tbsp papirika ,dry or ground
2 oz of strained crab juice…
8 tbsp old bay seasoning…
Add a three mother’s sauce roux…
continue to stir @ a low temp…dont boil or the sauce will break…
consistency should coat back of spoon…
garnish and serve as a appetizer or ala carte…
enjoy compliments of the Chef…
